Courtney Sproule

Featured Chef, PDX Salon April 20, 2009

din din began in 2007 as a monthly dinner open to the public—like a dinner party, but with strangers. din din takes places in changing venues around Portland and has been
hosted in restaurants, a cooking school, and even a nursery. Each din din offers regionally based foods and libations in a different way.
Often included as part of the evening is some sort of game for guests to play. din din thinks that having a nice meal doesn’t mean you have to be on your nicest behavior. din din imparts respect to food and the occasion of dining, but wants people to have fun. So, on one hand, the tables are decorated with beautiful old table cloths and serving pieces passed down from grandmothers, representing the tradition of food. On the other hand, guests talk and laugh with one another over games like Dolly Parton trivia or find the ‘fève’ in the cake.
din din is run by Courtney Sproule who also develops the menus and cooks for the dinners. Courtney is a self-taught cook who has worked as brunch chef at Matchbox Lounge and assists with classes at The Chef Studio, where lauded Chef Robert Reynolds teaches French and Italian cooking. Courtney is also a Board member for the Hollywood Farmers Market. In 2008 Courtney expanded din din to offer catering services. din din catering brings the fun and fluid spirit of its public dinners to your private events. din din can do most any type of event and provides high quality and highly tailored food, drink, and service. din din caters for all sizes of budgets.
For Courtney, food is never just a logistical detail of an event. Food is something for us to gather around. It should reflect just how special your occasion is, whether you’re celebrating a wedding or simply one another’s company. Food’s role in gathering us in celebration is what Courtney loves about cooking and why she eagerly decided to offer catering services.
